They have a nice texture and are versatile in the kitchen.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eTatume can also be left on the vine until it turns orange and fully matures, and some accounts recommend using it like a winter squash. We don't particularly care for it at that stage—the texture and flavor aren't as appealing to us, and the mature fruit has a relatively small amount of edible flesh around a large seed cavity.
