Callaloo

Amaranthus spp

$4.50
Description

Callaloo the dish, originates in West Africa where the greens were domesticated. It is also cherished in many parts of the Caribbean. We originally got our seed from Michael's Edible Plant Project many years ago. Two years ago, we sent a sample by request to Southern Exposure Seed Exchange and they trialed it with other varieties, liking this one the best. They now offer it in their seed catalog! Our plants grew up to 10' tall! But if you harvested them more or topped them, they would likely stay a more reasonable size. Space 18" apart and succession plant through the season for continual supply if you harvest frequently. The beetles like callaloo too, so be prepared. They readily self seed which is a good thing in our books, but some don't like that they can then be growing everywhere in no time!

How to grow

Sow very shallowly and somewhat thickly (to accommodate for naturally lower germination of the tiny seeds), about 12" apart. Can be direct sown, and will likely self-sow in the garden, if left to go to seed. For continuous and heavy harvest, plant every 2-4 weeks. Does not like frost to set outdoors when we don't expect any more cold, usually around April. You can plant this anytime through the summer and fall.

How to save seeds

So easy to save, and so easy to naturally self-sow in the garden too! After flowers start to decline which can take quite some time as they last a long time, watch from the bottom up as the brownish material will start to show tiny black seeds inside. You can keep gathering from the same flower or plant over time or wait as long as possible before losing them to the soil or rain, clip the entire stem and bring indoors to dry upside in a bag to catch the seeds.
